GUT HEALING GREENS CREAMY PASTA
serves 2
INGREDIENTS:
For the pasta
2 servings of gluten-free pasta (my favourites are brown rice or lentil pasta)
For the sauce
1 cup broccoli florets
1 packed cup of any leafy greens (e.g. kale, mustard greens, swiss chard etc.)
1/2 cup peas
1 cup pasta water
1 cup cashews
1 heaped tsp sea salt
1 large garlic clove
HOW TO MAKE:
Cook the gluten-free pasta according to packet instructions in well salted water (for taste).
In the last 5 minutes of cooking add the broccoli, leafy greens and peas to soften.
Drain everything over a large bowl to retain the pasta water.
Then add the lightly cooked vegetables to a blender and cover the pasta with a lid.
Add the cashews, salt, garlic and pasta water to the blender.
Blend for 1-2 minutes until silky smooth, adding more pasta water to get things moving if needed.
Once smooth pour over the pasta and mix well.
Serve with a crack of black pepper, lemon juice and extra veggies like sweet tomatoes for extra deliciousness!
